It’s the simple things in life that brings me great pleasure… such as visiting the farmers market for fresh berries – raspberries in this case. Summer is officially here around these parks, and I thought it would be nice to kick off the season with a pitcher of raspberry lemonade. Our batch was enjoyed with finger sandwiches and chips… talk about simplicity!
I’ve provided the recipe below, so that you too may enjoy a refresher over the weekend!
Recipe:
- 3 cups water, divided
- 1 cup fresh raspberries
- 1 can thawed lemonade concentrate (undiluted)
- mint leaves (optional)
Combined 3/4 cup water and raspberries in blender. Process until smooth and strain mixture through a sieve into a bowl. Discard seeds. Combined raspberry liquid, 2 1/4 cup water and lemonade concentrate in a pitcher. Chill then serve.
